Cuvée rosso

- Grape variety: 40% Merlot 40% Cabernet 10%Sauvignon Franconia 10% Refosco dal Peduncolo Rosso

- Harvest time: Depends on the grapes, most of them during the last ten days of September
- Vine Training System: Guyot and Sylvoz
- Winemaking: The grapes macerate on their skins for at least 20 days, the pumping over method is done up to 3 times a day. Fermentation is completed in unglazed concrete tanks.
- 40% of the mass is aged in French oak barriques (small barrels) (Nerves), the remaining
- 60% is aged and refined in large Slavonian oak barrels from Croatia.
- About a year later the two masses are put together creating a perfect blend.
- Alcohol Content: 13.5% vol.
- Total Acidity: 4.80
- Colour: Deep ruby red with garnet hues
- Aromas: Hints of raspberry, prominent scent of violets recalling red fruit jams and distinctive spicy notes of black pepper and cardamom
- Taste: Warm, full body with pleasant silky tannins and gratifying flavour
- Aging: 12 months in tank and 2 months in bottle
- Food pairings: All kinds of meat, especially smoked, grilled and charcuterie cured meat
