  • Winemaking: Soft crushing of the grapes. Natural cold settling. First alcoholic fermentation develops in stainless steel tanks with constant temperature control at 18° Celsius. Bottling (tirage) takes place the following spring of harvest time. The second fermentation phase occurs in bottles due to the addition of selected yeasts resulting in a sparkling wine.
