Simply, we have always operated guided by the respect for our land and our products. The result, apparently simple and “spontaneous”, is actually the result of a wise processing method that combines the traditional harvest by hand, with the most modern enological technologies and wine-growing equipment for the transformation of the product. For example, the unavoidable use of sulphites is constantly kept on the minimum necessary threshold, depending on the chemical-physical characteristics of the wine on which we are working.
