TERRA DI BONIFICA

Terra di Bonifica is a sweet wine made from white Picolit and Tocai grapes, produced in a non-suited area, the result of a long fermentation in barrique, wants to counter the hegemony and the presumption of those who only boast of a suitable area. I start producing sweet wine, the point of arrival for a real oenologist, “this is my opinion and I share it”.

Viticultural area: lison pramaggiore

Vine: piccolit 50% tocai 50%

Land: calcareous clay

Harvest time: end of October

Plant density: 1500 plants per hectare

Cultivation system: sylvoz

Production per hectare: 40 q.li

Winemaking: late harvest, torsion of the peduncle, aggression of the berries by the so-called noble mould

Gradation: 15.5%vol

Total acidity: 6

Color: Bright yellow, tending to amber

Fraganzes: tertiary, dried fruit

Flavours: it’s the aromatic range of fruit to dominate, very often of dried fruit and jam, such as apricot, peach, quince, pear, apple and fig, not even the aromas of flowers

Aging: one year in the tank and one year in barrique

Combined with: cheese and not to sweet desserts

Service temperature: from 8 to 18 degrees.
